Huevos Rancheros

If you’re in the mood for a more exotic breakfast dish, Mexican huevos rancheros is a tasty, filling option. Fried eggs rest on a bed of slightly crunchy corn tortillas and are topped with a spicy tomato-chili sauce. You can of course add guacamole, sour cream and bacon to make it really brunch-worthy. For more heat, add a dash or two of Tabasco.
