Borscht is a velvety beetroot soup, typical of Ukraine. Other ingredients may include cabbage, carrots, potatoes, cucumber, onion and tomato, which are cooked separately from the beetroot. Mushrooms and meat are also popular additions (chicken, pork or beef).
