If you’re in the mood for a more exotic breakfast dish, Mexican huevos rancheros is a tasty, filling option. Fried eggs rest on a bed of slightly crunchy corn tortillas and are topped with a spicy tomato-chili sauce. You can of course add guacamole, sour cream and bacon to make it really brunch-worthy. For more heat, add a dash or two of Tabasco.
Pho is a Vietnamese soup traditionally made with rice noodles dipped in a made-from-scratch beef broth and seasoned with various spices: star anise, cinnamon sticks, roasted ginger, roasted onion and black cardamom, fennel seed, clove, etc. Finely sliced lean beef is added and made to cook directly in the hot broth. To garnish, fresh herbs, such as cilantro and chives are sprinkled on just before serving. If you haven’t slurped your way through one of these steaming bowls yet, we highly recommend it.
